What are a couple of things I can do to achieve better MPG?
Swap from 16” SE wheels?
Re-fit under tray?
I recon I get 60ish with my chipped 1.4tdi.

60mpg in mixed driving isn't too bad. What sort of mileage in what sort of conditions are you doing, and how do you like to drive?

Irrespective of your driving style, the undertray would certainly help. The narrow lightweight 15's which were standard on the base and Special Edition A2's would also help, although not as much as if you were currently running the big heavy 17"s. Is the engine getting to 90° on the temperature gauge and staying there? If not, get the thermostat and temperature sender replaced with OEM units.

When you say 'chipped', is that some sort of plug-in aftermarket device or has the ECU actually been remapped? If it's a device, take it out straight away and get a proper remap. Further advice on that subject is not difficult to find in these pages and the one I'm thinking of isn't exactly expensive either.

Go through this in detail first. It sounds like you’re car is fundamentally sound but I would definitely replace the under tray for starters.
 
in addition to above advise a scan would be good to confirm that the ECU is also seeing the same temperature as the instrument cluster temperature gauge. The temperature sender unit is known to fail on all this generation of VAG cars and there are TWO sensors in the one housing, one feeds the temp gauge the other feeds the ECU. If the temp gauge is being feed the correct reading and is getting to 90 after a 5 mile run at greater than 40mph in our current weather conditions, cabin heater on cold, then the thermostat and the half of the temp sender unit feeding the gauge is working correctly, however the ECU may be getting a lower temp and as such will over fuel the engine resulting in lower than optimal mpg figures.
I will also ecko the advise about the plug in 'chip tunning' boxes being total garbage and should be removed immediatly, they are cheap for a reason in that they simply alter one or two values from sensors feeding the ECU, this in turn fools the ECU in to thinking the engine is in a different operating state and results in more fuel going into the engine, this may indeed give you a little more power but will also greatly increase black smoke and fuel consumption.

to be fair if you are getting 60mpg on short and medium length drives with constant 70mph + running then it is not that far away, the optimal speed seems to be about 65mph. on my own A2 which his correctly remapped and running a JDD gearbox on 16" A1 wheels and wided than optimal tyres at a motor way length journey at 65mph I get 72mpg, increase this to 70mph and this drops to around 68mpg
it also depends how many people are in the A2, more people and luggage less mpg, more noticeable on A/B roads than motorway journeys, but still a drop

Take the all seats out, switch off aircon by pressing econ button, keep windows closed or nearly closed, find the sweet spot on the revs, about 2250 on my tdi atl. Polish the paint and replace your right foot with a feather, get a crossword to donwhike accelerating. Move rear view mirror so you can't see people gesticulating behind you
 
These replies are brilliant - thanks. The remap/chip I alluded to was by a user of this forum on the ECU exchange. I have ordered a new thermostat to start troubleshooting the needle not getting to 90.

But you should get a scan done before replacing anything to check what you're going to do is actually needed as per @depronman 's post above
 
Has anyone mentioned tracking? That had a big impact for me as Mine was out and causing some drag and tyre wear.
