Thermostat was changed over the week end with a Gates thermostat .
I humbly suggest that your Gates thermostat is at least partly the issue.
Change it for a genuine one. Aftermarket ones never work properly - if at all.

Diesel filter still needs to be changed though.
Power delivery is excellent , it certainly moves when you put you right foot down .and there is no excessive smoke from the exhaust at all ..Definitely a problem in that case. You'd see an improvement in acceleration and mpg by going to a lighter 15 inch wheel, but you should be getting a lot more than 40mpg from the car.
I'd suggest a compression test.
It will also disable the auxiliary cabin heating element in a later TDI, such as the one shown on the OP's profile. Or, on TDIs before about 2002/52, the Webasto coolant heater.The econ button just switches off your aircon FYI.
