Removing engine&gearbox (gear linkage help please)

so the tdi90 we just bought has a few issues so we are removing the whole engine and box
what is the proper way to remove the gear linkages ?
what goes wrong if i just remove them ?
is there a special way to do this ?

I wonder if you could get by undoing the 13mm nut on the top of the gear selector shaft to release the counterweight that connects to both gear cables (thereby disconnecting both cables from the gearbox in one go) as well as removing the gear cable carrier bracket (3 bolts) & tie these up and out of the way - this should allow the engine and gearbox to be removed from below leaving the cables - and adjustments - effectively unaltered?

I should stress that I am not an expert - just had a 6-speed change done in the summer so had to do quite a bit of reading about the cables and brackets etc. as part of that.
 
What ever method you choose, it makes sense to at least check, if not readjust the cables after the refit. While they are disconnected and the engine out gives an ideal chance to check everything for wear or damage and relubricate the parts.
 
To the best of my knowledge, they are not available anywhere.
@chumsofmanutd are, I believe, working on getting them made by a custom cable manufacturer, as a commercial arrangement.
