Anyone got a how to for changing the head gasket on a 2001 1.4 tdi. Does the intake and exhaust manifold come off with the head or before it.

Posts 11, 12 and 13 from the TDI120 thread will also be helpful, if only to see how things are bolted together.

A 2001 TDI75 will have the AMF engine. Have a look at Fig. 12.2 of the TDI120 thread. This shows the back of the AMF engine.

You can see that the inlet manifold and the exhaust manifold at both bolted to the back of the cylinder head. However, you'll struggle to remove them from the head, as there are too many other bits and pieces preventing access to the required bolts. Also, the two manifolds are connected together via the corrugated EGR pipe. So, I'd be inclined to remove the exhaust pipe from the turbo, remove the turbo's air intake, its oil feed/drain pipe, its vacuum control tubes, etc, and see if you can lift the head out with the manifolds still attached. The whole assembly may be too big to lift out, meaning further dismantling may be required.

The honest answer is that I don't know. When I changed my engine, I took the whole thing out and then replaced it with another complete engine. However, with the aid of those photos, you should be able to see what you can't see, if that makes sense! :)
